Pasta Caprese with Fresh Tomatoes, Basil and Mozzarella


When fresh tomatoes and basil are at their peak, dinner doesn’t get any better than this. The only cooking involved is the pasta. 


Ingredients

2 lbs. of tomatoes, seeded and coarsely chopped
1/4 c. extra virgin olive oil
8 oz. fresh mozzarella cheese, cubed
½ c. chopped fresh basil
salt & pepper to taste
1 lb. pasta (penne, ziti or a shorter pasta works well)

Put chopped tomatoes and olive oil in a medium bowl and toss gently. Add mozzarella and basil and let stand 30 minutes to 1 hour allowing juices and flavors to settle together.  Season with salt and pepper if desired. Cook pasta in a large pot of salted water until al dente. Drain pasta and add to bowl with tomato mixture.  Toss gently and serve. Serves 6-8. To print this recipe as a PDF, click here.
