Monica's Lemon Cookies-Biscotti al Limone

My friend Monica lives in the Veneto region of Italy, loves to cook and especially to bake - and she was kind enough to send me her terrific recipe for biscotti al limone or lemon cookies. As an Italian who grew up in Australia, Monica has the most charming accent – sort of like “ciao, mate!” and it’s always great to hear about the goings on in her town.  Typical of most Italian cookies, these aren’t too sweet and are perfect with a cup of tea or to dunk in coffee. Monica shapes the cookies into an “S” for salute (health) and soldi (money) – and who couldn’t use more of both.

3 c. flour
1 tsp. baking soda
4 oz. butter (1 stick) at room temperature
2/3 c. sugar
lemon zest from 1 lemon
1 egg
2 T. fresh lemon juice
1 T. milk
confectionary sugar for dusting

Preheat oven to 350°. Combine flour and baking soda in a small bowl. Beat butter and sugar in the bowl of an electric mixer until creamy. Add lemon zest, egg and lemon juice and beat well.  Gradually beat in flour mixture and milk and mix until combined. Make small sausage shapes about 2 ½” long and form into an “S”. Bake on parchment covered cookie sheets 15-20 minutes until lightly golden.  Dust with confectionary sugar when cool. Makes 2 dozen.
